Diet Recipe: Pear, Grape and Walnut Salad

Summer is here (ish!) and I can’t wait to dine al fresco, a nice fresh salad for starter followed by a light pasta or meat dish. I’m still working on that low calorie tiramisu for the dessert! This is one of my favourites and will feature in my summer line up quite a bit! The Syns / Smart Points is due to the walnuts, but this is every bit as good for weight loss as any diet meal.

The tangy, nutty walnut flavour works incredibly well with the sweet fruity flavour of the pear and grapes. Combine that with the fresh flavour of the baby spinach and you’ll find yourself trying to get a little bit of everything in every mouthful. This is so flavoursome it doesn’t even need a dressing.

This is probably the fastest recipe I have. It takes less than 5 minutes to prepare and you can eat this immediately. That makes it perfect for these summers’ evenings. You don’t want to spend too long in the kitchen before sitting out to enjoy the weather.

Ingredients

Buy fresh
2 Pears
50 g Mixed grapes
10 Walnut halves
Baby spinach leaves

Diet friendly

At 137 calories per serving you can’t go wrong with this as a starter or a quick snack. Heck you could eat the whole plate for a healthy lunch! The Slimming World syns are in the walnuts, which you could have as a Healthy Extra B, making this syn free.

Method

  • Peel and core the pears. Slice thinly.
  • Halve the grapes.
  • Lay out a bed of leaves. Arrange the pear slice on top. Scatter the grape halves and finally break the walnuts over.
